The Dalmore 12 year old single malt Scotch further enhances this truth as the opening release from the distillery’s Principal Collection. Referred to as ‘The 12’, this limited edition release single malt is first aged for 9 years in ex-bourbon barrels and then divided equally, with half of the whiskey finishing in 30 year old Gonzalez Byass Matusalem Oloroso Sherry butts for another 3 years. The two halves are then
reunited for a matured cask strength of 80% proof. The 12 contains a mash bill of 100% barley with a nose of cinnamon cream, almonds, and caramel drizzled over fudge. The palate is rife with chocolate toffee, sherry, and spiced oak.
